When I'm craving a quick, flavorful, and lighter meal, turkey taco lettuce wraps are my favorite choice. I skip traditional taco shells in favor of crisp lettuce leaves, and honestly, I don't even miss them! These wraps are not only satisfying but also a healthy, low-carb option that keeps things deliciously simple.

Ingredients

  • 1.3 lbs 99% lean ground turkey
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1/2 small onion
  • 2 tbsp bell pepper
  • 3/4 cup water
  • 4 oz can tomato sauce
  • 8 large lettuce leaves from Iceberg lettuce
  • optional 1/2 cup shredded reduced fat cheddar (omit for Whole 30)
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp garlic powder

    In a spacious skillet, cook the ground turkey over medium heat, using a spatula to crumble it into smaller bits as it browns.

    Once the meat is no longer pink, incorporate the dry spices and stir thoroughly to combine.

    Stir in the chopped onion, bell pepper, water, and tomato sauce, then cover the skillet. Allow it to simmer on low heat for approximately 20 minutes.

    Rinse the lettuce leaves under cold water and pat them dry with a paper towel.

    Evenly distribute the cooked turkey mixture among the 8 lettuce leaves, placing it in the center of each leaf, and finish off with your preferred taco toppings!
