Ingredients

  • olive oil spray
  • 10 oz can rotel tomatoes with green chilies
  • 15 oz canned or frozen corn
  • 15 oz no salt added kidney beans
  • 8 oz tomato sauce
  • 16 oz can fat-free refried beans
  • 2 tablespoons + 1 1/2 teaspoons taco seasoning
  • 2 1/2 cups less-sodium chicken broth
  • 1.3 lbs 99% lean ground turkey
  • 1 medium onion
  • 1 bell pepper

Instructions

    Lightly coat a large pot with cooking spray and heat it over medium flame. Add the ground turkey, using a wooden spoon to crumble it as it cooks. Once the turkey is fully cooked, introduce the chopped onions and bell pepper, sautéing them for 2-3 minutes until they soften. Next, stir in the diced tomatoes, corn, beans, tomato sauce, refried beans, taco seasoning, and chicken broth. Increase the heat until the mixture reaches a boil, then reduce the heat, cover the pot, and let it simmer for approximately 10-15 minutes.

    Dish out the soup and enhance it with your preferred toppings, such as low-fat sour cream, sliced jalapeños, reduced-fat cheese, chopped scallions, diced onions, or fresh cilantro. Any leftovers can be portioned out and frozen for convenient future meals.
