  • 2 cups basmati rice
  • 4 cups water
  • 1 cup frozen peas
  • 2 large veggie bouillon cubes
  • 2 dry bay leaves
  • ¼ teaspoon black pepper
  • kosher salt
  • ½ cup chopped onion
  • 2 garlic cloves
  • 1 teaspoon ground turmeric

    In a medium-sized heavy-bottomed pot fitted with a snug lid, warm the oil over medium heat. Sauté the onions, garlic, and turmeric for approximately 2 minutes, or until softened.

    Incorporate the rice into the mixture and stir well, continuing to sauté for an additional 2 minutes while stirring frequently. Then, add the water, peas, bouillon cubes, bay leaves, and black pepper. Taste the mixture for salt; it should be well-seasoned and reminiscent of a flavorful broth, so adjust the salt as necessary.

    Allow the water to reach a boil over medium-high heat, stirring once during this stage. When the water level has reduced to just cover the rice, lower the heat to the absolute minimum and cover the pot. Let it cook for 15 minutes.

    The rice will cook through the steam, so refrain from lifting the lid. After 15 minutes, turn off the heat and let the pot rest for at least 5 more minutes without removing the lid. This will allow the steam to complete the cooking process without burning the rice at the bottom. Finally, use a fork to fluff the rice and serve. Enjoy!
