In a large non-stick skillet, warm 1 teaspoon of oil over medium-high heat.
Add the shrimp to the skillet and sauté until they become just opaque, which should take around 2 to 3 minutes. Once cooked, place them on a plate.
In the same skillet, pour in the remaining oil and heat it over medium-high. Add the onion, garlic, and sage, sautéing for about 4 minutes while stirring occasionally until they turn golden brown.
Pour in the vinegar and let it cook for 30 seconds. Next, add the broth, bring it to a boil, and let it simmer for 2 minutes.
Incorporate the beans and spinach into the skillet, cooking until the spinach has wilted, which will take approximately 2 to 3 minutes.
Take the skillet off the heat and mix in the shrimp. Top the dish with crumbled feta cheese and serve in 4 bowls.
