Ingredients

  • 2 large ears corn
  • 1 1/2 medium red onions
  • 12 cherry tomatoes
  • olive oil spray
  • 3/4 teaspoons kosher salt
  • 3 tablespoons BBQ sauce
  • 1 tablespoon water
  • 1 zucchini
  • 1 yellow bell pepper
  • 1 red bell pepper

Equipment Needed

  • long metal or wooden skewers if wood, soak 1 hour before

Instructions

    If you're using wooden skewers, let them soak in water for approximately 1 hour.

    Trim the small ends off the corn and slice each ear into 6 sections, resulting in a total of 12 pieces.

    Assemble the skewers by alternating the vegetables, ensuring that each skewer contains 2 pieces of every type of veggie. Lightly coat with olive oil and sprinkle with salt.

    Set the grill to a medium-high temperature and allow it to preheat.

    In a small bowl, mix together BBQ sauce and water until well combined.
