Ingredients

  • 4 large fresh cobs of corn
  • 1 tbsp fresh lime juice
  • 1 tbsp minced cilantro
  • 2 tbsp scallions
  • 1/2 cup 40 g cotija cheese, grated
  • 5 lime wedges for serving
  • 2 tbsp fat-free Greek yogurt
  • 1/2 tsp chili powder
  • 2 tbsp light mayonnaise

Instructions

  1. 1

Cook the corn by immersing it in boiling water for 5 minutes, then take it off the heat.

  2. 2

Once it’s manageable to touch, slice the kernels off the cob. This should yield about 4 cups.

  3. 3

In a spacious mixing bowl, blend together mayonnaise, yogurt, chili powder, and lime juice until thoroughly combined.

  4. 4

Incorporate the corn, cilantro, scallions, and cheese into the mixture and gently toss to combine.

  5. 5

Present the salad with lime wedges on the side.
