Ingredients

  • 4 1/2 cups seedless watermelon
  • 1 1/2 cups cucumbers
  • 1 tablespoon fresh lime juice
  • Thin cucumber slices
  • 1/4 cup monk fruit sweetener

Equipment Needed

  • 9 x 9-inch metal cake pan

Instructions

    In a blender or food processor, blend together the watermelon, cucumber, sugar, and lime juice until the mixture is entirely smooth. Transfer this blend into a 9 x 9-inch metal baking dish.

    Place the baking dish in the freezer for approximately 1 1/2 hours until it is nearly firm. After that, use a fork to thoroughly scrape the mixture, mixing everything well and breaking apart any larger pieces. Return the dish to the freezer and allow it to freeze until it is almost set again, which will take about 1 to 2 hours.

    Take a fork and scrape the granita to create fluffy, snow-like ice crystals. Continue to freeze and periodically scrape the mixture until it is completely frozen and has a shaved texture, which should take around 5 hours in total.

    To serve, scoop the granita into individual serving glasses and, if desired, top with slices of cucumber for garnish.
