  • 4 cups diced seedless watermelon
  • 3 oz crumbled feta
  • 2 tbsp extra virgin olive oil
  • 1/8 tsp kosher salt
  • fresh black pepper
  • 3 cups baby arugula
  • 1/4 small red onion
  • 2 tbsp balsamic vinegar
