For those who enjoy a salted rim, pour a few tablespoons of salt into a broad, shallow dish. Grate the zest from half of the grapefruit into the dish and mix well to combine. This mixture will be sufficient for multiple cocktails, and any extras can be stored in a Ziploc bag for a couple of days.
Dice the jalapeno (keeping the seeds and pith will add extra heat; feel free to discard them for a milder flavor) and place them into a cocktail shaker or a sturdy glass along with the agave syrup. Utilize a muddler or the end of a wooden spoon to gently crush the jalapenos, which will help release their flavor and infuse the syrup. Next, incorporate the juices from the grapefruit and lime. For a spicier concoction, allow it to steep for at least 15 minutes.
If you’re salting the rim of your glass, take a paring knife and create a small slit in the grapefruit wedge. Use this wedge to moisten the rim of the glass, then roll it in the salt until it’s fully coated. Lightly tap off any excess salt.
