I also added a perfectly ripe banana for natural sweetness, and I was thrilled with how these Zucchini Oats, affectionately known as Zoats, turned out. They're a fantastic high-fiber option for a wholesome morning meal.

Ingredients

  • 7 ounces zucchini
  • 1/3 cup quick oats
  • 1/3 cup milk of choice
  • 1/8 teaspoon cinnamon
  • 1/4 cup blueberries
  • 1/2 ripe banana
  • 1/3 cup egg whites
  • 1/2 ounce slivered almonds

Instructions

    In a small saucepan, mix together the first six components, from zucchini to cinnamon, and set the heat to medium-low.

    Allow the mixture to cook, stirring frequently until the oats achieve a creamy consistency and are fully cooked, which should take approximately 3 to 5 minutes, varying with the type of oats used.

    Transfer the mixture to a bowl and garnish with blueberries, slivered almonds, and the leftover cinnamon.
