Ingredients

  • 2 medium zucchini
  • 1/2 lemon
  • 1/4 cup shaved Parmesan
  • kosher salt
  • 1 cup baby arugula
  • 4 tsp extra virgin olive oil

Instructions

    In a bowl, mix together the oil and lemon juice. Arrange a single layer of zucchini slices to fully cover the base of a serving platter. Sprinkle with salt and pepper, then lightly drizzle with additional olive oil and lemon juice.
