Ingredients

  • 4 cups grated zucchini
  • 1 1/4 cups Heart Smart Bisquick
  • 1/3 cup minced onion
  • 1 tsp kosher salt and fresh black pepper
  • 1 tsp parsley
  • 1/4 cup grated Parmesan cheese
  • 3 large egg whites
  • 1 large egg
  • 1 tbsp olive oil

Instructions

    Begin by heating your oven to 350°F (175°C).

    In a mixing bowl, combine all ingredients thoroughly.

    Lightly coat a 9 x 13-inch baking dish with cooking spray, then transfer the mixture into the dish.

    Place in the oven and bake until the top is golden brown and a toothpick inserted into the center comes out free of batter, roughly 45 to 50 minutes.

    Once baked, slice the casserole into 12 equal servings.
